Do we say 'It's sleety today.'?
We say 'It's sunny/cloudy/windy/foggy/snowy/stormy/rainy'. Then how about these two, hail and sleet?
And is there any other common expression of the weather?

It sounds right to me.
But I'm not quite sure what exactly sleet IS. There were several times when I was skiing with my family in Europe when none of us could agree on whether it was sleeting (is that a word?) or not!
