2. Tá mé ag baint suilt as an earrach.
I am seeing both forms online.

"ag baint suilt" is the correct form, since the object of a verbal noun is in the genitive case. There are exceptions to this rule, however. If you use an adjective with the object, for example, it generally remains in the nominative case: Tá mé ag baint sult mór as an earrach.
