I am not sure if it has any other non-literal meaning. Literally , its opposite is " unroll a carpet"

The standard opposites are "to roll out" a carpet and "to roll up" a carpet.
When you purchase a carpet, it most often comes in the shape of a cylinder. You then "roll out" the carpet, which means you extend the carpet so that it lies flat on the floor.
