What does it mean? Someone is a mess of something.
"She was a mess of gorgeous chaos; you could see it in her eyes."

It's not a standard expression, but rather a literary one. This person thought that the woman was very complicated but still found her very attractive. It's actually not a good expression, in my view, because "mess" and "chaos" both mean the same thing here.
