Two ways:
Literally: ¡Eso suena genial! Or ¡Suena genial!
Both express the same idea. The first one is exactly the same, the second is more regular.

¡Suena bien! , ¡ Suena genial! (using the verb sound, 'sonar') ; ¡Me parece bien! , ¡Me parece genial! ( genial is a little better than bien, just like great is a little better than good)

Santi is right. This is a colloquial expression to express something you really love to do or try. For instance: Why don’t we eat some burgers now? You: «Wow, that’s sounds great. I am starving! » (Wow, Suena bien! ¡Tengo mucha hambre!/or ¡Estoy muy hambrient@!

Se trata de una frase hecha para transmitir entusiasmo con una idea. Aunque la traducción literal sería 'Eso suena genial', la traducción real es: '¡Me parece genial!', 'Me parece fantástico'.
