Can I use these interchangeably? Don't you believe what I'm saying? Don't you believe what I said? Don't you believe my words?

It will be great to use them depending on the time you uttered them. First sentence is in the present progressive tense. It means you are doing the action at the moment. Second verb is in the past tense. Third sentence is okay. It's general, so we may alternate the second with either the first or second statements.
