How to order soya bean drink and dessert in Taiwan, China and Singapore ?
1. Soya Milk/ Drink. Is the following correct ?
请给一杯豆浆。(热的/冰的)
Qǐng gěi yībēi dòujiāng (rè de/bīng de)
Please give me a glass of soya milk (hot/cold)
I think in Singapore, I have heard it called “豆花水 ” (Dòuhuā shuǐ). Is this correct ?
How do you say half sugar, ¼ sugar, ¾ sugar ?
2. Soya Bean Curd Dessert
What about the bean curd dessert that usually comes in a bowl and is topped with ginger syrup or plain syrup. You can usually add red beans, peanuts or lotus seed etc ? I think in Cantonese it is called “tou fu fa”but I am not sure in Mandarin. How do you order this in Mandarin ?

1、soya milk-豆浆、豆奶(and 豆花水 is also correct).
But instead of 请给一杯豆浆(热的/冰的), you should say 请给我一杯(热的/冰的)豆浆.
2、Soya Bean Curd Dessert-豆(腐)花.

2.豆花(中国北方说法,maybe salty),豆腐花(广东说法,sweet)
We usually don't add sugar in a specified way like you said. You can say "加多点糖"(more sugar) or "少糖"(less sugar) if needed.

As for the sugar question, we have 10 level to rank.
无糖=0 sugar
三分甜= 3/10 sugar
半糖=half sugar
七分甜=7/10 sugar
全糖=100% sugar

2. 请给我一碗豆腐花/ ( 老板),我要一碗豆腐花。
FYI:in the north (roughly on the north of the Yangtzi River)of China, 豆腐花 may not be sweet, but salty instead; and the toppings may be cilantro, black fungus, lavor, crushed peanut, mashed garlic and bruised ginger. For me, the salty bean curd jelly is more desirable :)

half ---yi2ban4 or er4 fen1zhi1yi1
一半 二分之一
1/4 --- si4fen1zhi1yi1 四分之一
3/4----si4fen1 zhi1 san1 四分之三

i think we call it "dou4 fu hua1".
red bean--hong2dou4 红豆
peanut---hua1sheng1 花生
lotus seed--lian2zi3 莲子
when you order "dou4fu hua", you can ask them to put one of those stuff on it. I like peanut better.
