What is the difference between 는 것을 and 는 게 in this context?
I know that 는 게 is the contracted form of 는 것이 but why is it that in these sentences 는 게 is used instead of 는 것을?
노래하는 게 재미있어요? (Is singing is fun?)
지하철을 타는 게 편리해요? (Is taking the subway convenient?)
Are 재미있다 and 편리하다 not considered verbs but or more like adjectives/adverbs? Is that why the sentences are 노래하는 게 재미있어요 instead of 노래하는 것을 재미있어요?

That is right!
재미있다 and 편리하다 are adjectives not verb s even though they look like one :D
That's why we don't need 것을 but 것이 or 게 ^^
And 것을 is used with verbs as it is the mark for objectives.
은지는 공부하는 것을 싫어한다.
케빈은 비빔밥을 먹는 것을 좋아한다.
the shortened version of 것을 is 걸
은지는 공부하는 걸 싫어한다.
케빈은 비빔밥을 먹는 걸 좋아한다.
