ananas' = pineapple's
ananassen = the pineapple
ananassens = the pineapple's
ananasser = pineapples
ananassers = pineapples'

ananassenes = the pineapples'

Hi Shawn. They are correct forms. They are not the only correct forms since there are several ways of saying it – check here if you want to know them all: https://ordnet.dk/ddo/ordbog?query=ananas
I would normally say the indefinite plural they same way as the indefinite singular: ananas
