How do you say these naturally?
It's an honor for me, you to say something like that about me.
I'm proud to hear you to say something like that about me.

Here are some possibilities that sound more natural to me:
I am honored that you have said such a thing about me.
I am honored by what you have said about me.
You honor me by what you have said about me.
To hear you say something like that about me makes me feel proud.
To hear you say something like that about me gives me pride.

I would say:
* I am honored that you have mentioned me in such a delightful way, Thank you.
or
* I am honored to have heard such wonderful words, and it makes me proud.

The second one is fine.
The first one really needs a conjunction of some sort:
It's an honour for me when you say something like that about me.
It's an honour for me for you to say something like that about me.
