They’re all ok but the first two are a bit ambiguous. The third is the simplest and clearest - if you say ‘she has big eyes’ it’s understood that she, being a person, has 2 eyes. The other two would fit more into a sentence which compares them with something else, as in ‘she has a tiny nose and a pair of really big eyes’, or something like that.
