Which is the correct sentence?
a) I would like to put the meeting off FOR 15 minutes.
b) I would like to put the meeting off BY 15 minutes.
c) I would like to put the meeting off UNTIL 15 minutes.

"a" is correct
If you want to use sentences like b and c then adjust them as follows:
b) I would like to DEFER the meeting BY 15 minutes.
c) I would like to DELAY the meeting UNTIL 15 minutes TIME.
