sorry for the late or sorry for the delay, which one sounds better?

Dena's comment is correct.
You can't say "the late" - late is not a noun.

You cannot say "sorry for the late" by itself but if you add something after "late" you certainly can. "Sorry for the late reply but I have been working all day" is a good example. This is good UK English.
