Can I use the word "Shamaness" for a woman who exorcises demons out of people's bodies?
"I am taking my little sister to Shamaness Sarah today because we think she is being possessed by a ghost. The shamaness will exorcise the ghost out of his body."
And if it's a man, I'll use "shaman".

It's not common, but I would say that it is fine.
Note: you said 'sister' then 'his body'. I assume you meant 'her body'.
