Are both sentences OK? We were told we could only bring as many items as we could carry. So we had to leave behind most of our things.

Both sentences are correct. The second sentence is fine if the intention is to refer to an action in the past.

They're both correct but I think normally we would say 'So we have to leave most of our things behind.'
