Τῶν γὰρ δούλων τῶν σπουδαίων τους μὲν γεωργοὺς ἀποδεικνύουσι.
I don't understand why τους γεωργοὺς is accusative. Isn't it supposed to be nominative (so οι γεωργοι) so that it can be the subject of the sentence?

You are absolutely right. IF...only IF οι γεωργοι were the subject of the sentence it would be nominative. Since it's the destination of the verbal action (object) so it's accusative.
