Hello,
'This'
is a demonstrative pronoun indicating a singular place, direction, person, or thing; either spatially or figuratively. They have to be present or near in place or time.
'These'
It is the plural form of 'this' ,so it refers to the same things near in place or time but in plural form.
'Those'
is the plural form of the demonstrative pronoun 'That'.
It also refers to things or persons, that were previously mentioned or far in place or time.
'That' as a relative pronoun differs from 'that' as a demonstrative one 'that ,those' .
The relative pronoun 'that' is equivalent to 'which' and points out a person or a thing spoken of before in a sentence and may be both singular or plural.
"This is the place, that I told you about."
'Which' is the same as 'that':
"These are the references, which you can use to write your thesis."

this/these:
"this IS my book"
"these ARE my bookS."
that/those:
"that IS my book."
"those ARE my books."
"these" is just a plural form of "those" while "those" for "that".
that/which:
"that" should be used to introduce a restrictive clause.
eg. 'the house THAT is painted red has been sold.'
here, the clause "that is painted red" is describing on one particular house.
"which" should be used to introduce a non-restrictive or parenthetical clause.
eg. 'the house, WHICH is painted red, has been sold.'
while here, the clause "which is painted red" may refer to not only one house, but a lot more houses in red paint.

This book (here.. close to me... a book near me) and that pencil (away from me... )
This blue car (not an other car THIS ONE ) and that red one
I want THIS and not THAT one
That house (over there) is very big
These pencils (plural) and those books (plural)
These red books and those big dictionaries
* "these and those" are used as "this and that" but only for plural things

Witch ( for question) one is your friend?
My friend is this one!

I want this book not That one!
