in terms of response,why do we use the plural form of "apology",but "gratitude" is singular?

You can say, "Please accept my apology for being late to class today" [ singular] or "Please accept my sincere apologies for the hurt I have caused you". [ plural]
I owe you a debt of gratitude for all the you have done to help me[ singular]

Gratitude is also uncountable. ;)
