So "choice" is an adjective in disguise?
I have been to walk tonight, and got some very choice wild flowers.

In some informal language groups, choice is certainly used as an adjective, but it's not recognised all over the world.

I would say the adjective version is a rare usage, but not extremely rare. Meanwhile, the noun form is very common.
