What does "harvest" mean with animals? I understand with crop but is it the same with animal?

It means to cut up the animal meat and leave the anima's carcass behind. It would be the same as when you catch a fish and cut off its head, remove the guts, and cut out the meat or filets. But "harvesting" is used for animal.
Harvest is typically used to mean when farmers gather crops from the field, but in this moment, it is used to remove meat from an animal.

harvesting” or “wildlife management” means to kill an animal so as to control a population or an ecosystem.
