There aren’t enough computers for one each at the moment and we always have to share. Is ‘for one each’ a fixed collocation or something else? In this context, could we explain that as ‘for everyone to have one computer each’ ?

To me, "for one each" in this case sounds a little funny. But your explanation is a good one, and your usage is perfect. I think I'd say, "There aren't enough computers at the moment to have one each, and we always have to share."
