I was born in China Yuncheng, Shanxi Province. It is known as the hometown of Guan Gong. There are many ancient cities in Shanxi. And it's well preserved. However, too much commercialization has ruins its beauty.
I want to introduce the noodles of my hometown. There are many kinds of noodles.
Picture 1 shows Yopo noodles. After the noodles are boiled, put them into a bowl, add salt, soy sauce and other sauces, and then drizzle with hot oil. The simple version of oil noodles is ready.
Picture 2 and 3shows Shaved noodles.Chef cuts the dough into strips and makes noodles fly directly into the boiling pan. The noodles made in this way will taste very smooth, like a fish swimming in mouth.
