The dictionary says the pronunciation of “she” has strong form /ʃiː/ and weak form /ʃɪ/.
But in fast casual talk, is there possible to pronounce it like “shuh” /shə/?

Variation is always possible given that there are hundreds of millions of speakers, but for the vast majority of speakers the vowel sound is almost always /i/ and the word rhymes with tree, knee, see, bee, three, tea, etc.
