The guaguas de pan are very cute!
For this writing exercise, it was only possible to reply with a "comment" (instead of a correction). To draw your attention to the changes I made, I added a little * (an asterisk) before the places where I changed words or added additional words. (Good news -- not very many changes were needed!).

Here in Ecuador there some important festivals. Right now, on November 3rd, people * usually celebrate Cuenca Independence Day. During this holiday there * are some free concerts and * dances (or "dance performances" ? or "dances" for events where everyone dances to music). Cuenca is one of the most traditional cities in Ecuador but this holiday usually * is combined with "All Souls' Day" * which we celebrate on November 2nd. We usually eat Guaguas de pan, which are dolls made of bread that are eaten together with Colada Morada, a warm and sweet brew made with different berries and only prepared at this time every year.
