Just a couple of language suggestions:
Do you mean a pinch of salt? Fruits and herbs can come in bunches, but the word we use for salt is a 'pinch' (it's the amount we can hold between the thumb and forefinger).
I'd also say freshly chopped coriander - 'minced' seems too fine.
And now for a culinary suggestion - have you tried rubbing a clove of garlic around the bowl first?

Your definition of "a pinch" of something is what I've always understood as "a pinch." I've come across explanations of "a pinch" in certain cookbooks that describe it as how much you can hold with your thumb, index finger and middle finger! That would be a substantial difference in the amount. Maybe we should all just season to taste.
