Why are you asking me? How would I say 'Why are you asking me?' in French? Could I say 'Pourquoi est-ce que tu me demandes?' Thanks!

Yes seems good to me. Or maybe you could say 'Tu me demandes pourquoi ?' if it is informal.

I would say more often "pourquoi est-ce que tu me le demandes?" but it's just a feeling, I think "pourquoi est-ce que tu me demandes?" works just fine. If you really want to emphasise "me" you can even add "pourquoi est-ce que tu me le demandes, à moi !" However allow me to disagree @Eire_Craig, the casual form would be "pourquoi tu me demandes?"
