Poetry is a group of poems and a poem is a piece of poetic writing. I like writing poetry is commoner than I like writing poems. Poesy is another term which means poetry, but it is not very common.

Say "I like writing poetry". A poem is a single example of poetic writing. You could also say "I like writing poems".
