The "odds" are the likelihood of something happening. Here she's saying that she knows it's very unlikely that he will call or show up, but she is going to "bet" that he will. Say that the odds of something are 1000 to 1 so 999 times out of 1000 it won't happen. She's betting (hoping for) the one time it will happen.
