"In some ways, I like shopping early in the morning." (Then you would discuss the reasons why).
"In some way" is used when the speaker doesn't know the reasons why.
Example: "In some way, she really likes him."
"In a way, I like shopping early in the morning, because the store is not crowded." (I prefer "in a way", rather than "in one way", though both mean the same thing.)
