In Swedish there are two words for grandmother, 'mother's mother' and 'father's mother', but is there also a word for someone who is a grandmother only by law, e.g. the second wife of one's grandfather? Or for an informal grandmother? Thanks.

You should be able to use 'svär-' regarding any in-laws.
For example:
Svärmor - mother in law
Svärfar - father in law
Svärson - son in law
Svärdotter - daughter in law
Svärfarmor - grandmother in law
and so on...
I'd say that 'Svärfarfars/morfars andra fru' - grandfather's second wife, might be possible to say, but I've never heard it in use.
For informal grandmother I'd say that 'Extramormor/Extrafarmor' would work.
