The next day after the conference Adam and me are going to visit the organizers* and see how they work. Does someone want to join us?
*We want to visit them in their headquarter. And we ask other participants of this conference.
Guilhermes comment gives the answer. You should always use 'I' before a verb. 'Anyone' means it is an open offer to the people you are talking to.

Hi Piotr. Here's what I would say in that situation.
The day after the conference, Adam and I are going to visit the organizers* and see how they work. Does anyone want to join us?
Best wishes,
Guilherme.
