Is it correct to say I have uncountable cousins ? What I mean by that not so correct sentence is "I have a lot of cousins. "

You could also say 'I have numerous cousins' or 'I have too many cousins to count.' Best wishes Bob

I have AN uncountable NUMBER of cousins. This is the correct way. We understand that it is an exaggeration to mean "I have MANY cousins". "I have lots of cousins"/I have a lot of cousins" is more informal.

The correct way to say it is either: I have a lot of cousins. or I have many cousins. There is also a phrase that you might use "I cannot count the number of cousins that I have" or you might respond to a question "how many cousins do you have" with "it's too many to count !!". This is a light-hearted (amusing) way of responding.
