Meglio "un'email", anche se scrivere "una email" non sarebbe comunque sbagliato.

Come già detto, è meglio usare l'apostrofo e scrivere "un'email" (come "l'email" anziché "la email"). Suona meglio anche all'orale.
Spesso si dice, e si scrive "una mail" (senza il prefisso "e-"), una forma che risolve il problema.
