“My, my” is more like “wow” or a lighter version of “oh my god”. “Ain’t he fine?” means literally “isn’t he fine/great/good?”

‘My, my’- in this sense is equivalent to ‘wow’ ‘Ain’t he fine’ means ‘Isn’t he gorgeous/ handsome/ good looking/ attractive?

Shan is correct; here, "fine" does not mean "good." It is slang for "attractive," as in this claasic song: https://m.youtube.com/watch?v=rinz9Avvq6A
