Realmente ninguna.
Aunque quizás podrías usar "poquito" para hablar de una cantidad más pequeña que "poco" o lo mínimo ¿Me entiendes?

There is no difference.
You can use either. the "ito" just a diminutive.
translation could be: un poco : a little bit, un poquito : a little tiny bit.
