'I like vegetables.' is the correct way because you are talking about more than one vegetable.
There are some exceptions to the -s plural suffix — such as 'There are 10 sheep.' or 'I think aircraft are cool.' — though most of the time plural nouns use the -s suffix.

Hi Hafsa. The correct way is to say "I like vegetables." It is not common to say "I like vegetable."
You can use vegetable in singular form, for example : Cabbage is a leafy green vegetable. Kale is my favorite vegetable.
