I wonder if the following sentences are correct.
1. I miss you more each passing day.
2. I miss you more WITH each passing day.
If so, what's the difference in meaning between them?

They are both correct. However, the second sentence using "with" is more commonly used. Good question!

There is no difference, number 2 is a bit more poetical.
