Wow~~~! I am shocked for these two chinese words. And I can't answer your question which is so professional and sophisticated in cooking materials even to explain them, because I never heard of "仙草" ~~~~~ and the other one "凉粉儿" that I just ate it in hot weather when I was little~~~. but i can check it when I get off my work~~~ ~~~~~

仙草(中国大陆、台湾、马新稱作仙草, 港澳稱作凉粉草)(学名:Mesona chinensis),又名仙人草、仙人凍、薪草,唇形科仙草屬草本植物。为药食两用植物。 鸡豆凉粉 系取自丽江地产的一种鸡豆(又名“鸡碗豆”)磨面滤浆做成的一种凉粉小吃。因鸡豆富含黑色素,做成的凉粉外表呈现黑色,所以人们又称做“黑凉粉”,旧时吏官不知个中就里,在乾隆《丽江府志》中,曾把这种风味小吃称作“食黑豆腐”,其实“黑豆腐”就是今天的“黑凉粉”。 在丽江新老城区大街小巷,几百年业,鸡豆凉粉是一种经久不衰的风味小吃,暑吃凉,寒吃热,凉吃拌以酸醋酱油葱花蒜沫麻油调料之类,能消暑开胃、止车晕浪;热吃将凉粉在平底锅内用香油双面炸黄、佐以调料,乘热食之,也可晒干后煎食等。 "仙草" is plant, boil with water to make the black jello. "鸡豆" is bean, ground it into powder then boil with water to make black jello.

仙草is also called 凉粉 in some place,but 鸡豆凉粉is the sspecial snake in lijiang (a chinese city in mian land), 仙草is first appeared in Taiwain. they are different in materials and the method of making it.
