"Far from satisfied," "far from satisfaction," and "far from satisfactory" can all be used. It depends on whether "we" are trying to satisfy someone or trying to become satisfied ourselves. If we are trying to satisfy our boss, he might say we are "far from satisfactory." However, if we are not satisfied with our boss, we might say, "We are far from satisfaction." More likely we would say, "We are far from satisfied." If you can replace "satisfaction" with "satisfied", you can use either. However "satisfied" is much more common. In the case where we are trying to satisfy ourselves, any of these can be used because we are both trying to satisfy someone (ourselves) and satisfy ourselves.
