Could you tell me if this makes sense ? ( Referring to a book)
This is a colour version . This is a black and white version
This is a new version in colour

They all make sense, but when referring to books we usually call them "editions" rather than "versions."

Smoother:
This is the color/black-and-white edition.
This is the new color edition.
There’s a new edition in color.
(‘colour’ is correct in the UK of course)
