Today I got my stitches taken out by the dentist this morning. I was supposed to get my other two wisdom teeth extracted after the removal of the stitches, but I didn’t. From the prior experience, I know the inflammation and pains can last more than a week, which makes biting and chewing very difficult. I have been having congee as meals for a week since my two wisdom teeth on the right side were removed. That’s ok in ordinary days, but will be miserable during the Spring Festival when there are so many delicious food to enjoy. Therefore, I told the dentist that I will come back to take the procedure after the festival.

From the prior experience, I knew that the inflammation and pain could make biting and chewing very difficult for more than a week. I'd been having congee meals all week long since my two wisdom teeth on the right side were removed. That’s okay ordinarily, but would be miserable during the Spring Festival when there are so many delicious foods to enjoy. Therefore, I told the dentist that I will come back to have the second procedure after the festival.
Tenses were tricky here. I never understood why congee never became popular in America. I hope you enjoy the festival foods!

'Ok' usually can also be spelled out as 'okay.' Also, 'ordinary days' is a little stilted. Some other suggestions could be "That's okay normally" or "That's okay most days." Good job and hope you feel better.
