What's the best way to ask questions regarding English grammar?
1) Should it be "to use the word" or "to say the word"? Should I ask, "Do native English speakers use the word "fanfic?" or, "Do native English speakers say the word "fanfic?"
2) Does it sound natural to say ...
Is it natural to say...
Is it acceptable to say...
3) Does the phrase "Should I say ... or ..." sound natural?

(1) "Use" is better here. Both options are valid, but "use" would be much more commonly spoken by native speakers in this kind of structure & context.
(2) "Does it sound" is the better of these three options, if you're looking to understand the finesse of native speakers. But if you're only interested in grammatic validity and understandability, then "is it acceptable" is better.
(3) Yes, that's fine.
