The 'does' in this kind of sentence is used to either emphasize that she really likes to eat (people will even put emphasis on the word and prolong vowels in it when speaking, kind of like: "she *doooes* like to eat"), or to confirm what someone else already expressed: "Yes, she does like to eat." (Although the "yes" would often be implicit.)
