"I am Chinese"
"Chinese" is a noun that is not countable. As such, the article "a" is not used. Actually, when you say "I am Chinese," you are using Chinese as an adjective. "Chinese" can also be used as a group noun to indicate Chinese people.
I hope that helps you a bit with some English learning. Good luck with your learning goals!
