Squirrel Appreciation Day Cake.
A squirrel works hard and always prepares ahead of time. For this reason, they are my kindred spirit. January 21, is a special day for my spirit animal, the squirrel! To celebrate and appreciate the cutest rodent friend, I created a specialty decorative cake. This is a nutty, chocolaty, drunken rum cake! The cake base is a tree trunk that consists of rum-soaked sponge layers, incorporated with dark chocolate and rum raisin cream. The pièce de résistance, gently placed atop, is a hand-crafted, whole wheat cookie of my squirrel friend, Haruchan, surrounded by his favorite nuts! A special day requires a special cake indeed!
