En la práctica se suelen emplear tanto una forma como la otra.
Al mediodía: es a las 12 de la mañana.
A mediodía: período que comprende las horas centrales del día.
Ej: Tenemos abierto el almacén a mediodía. O sea que no cierran en las horas de mitad del día, 11 a.m., 12 m. 1 p.m.
No cerramos el almacén al mediodía: a las 12 m. no cierran el almacén.
