I didn't sleep last night because of the noise.
I couldn't sleep last night because of the noise.

Both are correct.
when you say 'did not' - it means you weren't sleeping whole night because of the noise.
'could not' - you weren't able to fall asleep because of the noise (and you didn't sleep)
