Ejemplos: "Tengo aguja e hilo". "Construyen casas e iglesias". "Dame agua y hielo".

Hi! Because of the sound "y" is the same of "i", so when the word begins with a "i" we must change the "y" to a "e".
Here are some examples:
Es incorrecto y ilógico = Es incorrecto e ilógico.
Vamos para España y Italia = Vamos para España e Italia.
The same thing happens with "u" instead of "o", it's because the sound.
Example: ¿Amor o Odio? = ¿Amor u Odio?

It's in the same way you use a/an in English. You don't say "a apple" because it sounds quite bad. For the same reason we don't use "y" before words that starts with i or hi (there is an exception with hie- hia-)
For example:
Me gusta planificar e improvisar. I like planning and improvising.
Compra agua y hielo . Buy water and ice
Aprobé matemáticas e historia. I passed maths and history.
