Good question!
Let me give you some general rules, but please remember there will be exceptions!
All nouns capable of taking a plural end in -s, except the following:
Nouns that end in -s, ss, sh, ch, x, o
bus - buses
kiss - kisses
brush - brushes
church - churches
fox - foxes
potato - potatoes [exceptions: photos, kilos, videos]
Nouns that end in a consonant + y:
baby - babies
lady - ladies
daddy - daddies
Nouns that end in f / fe:
knife - knives [you can obviously hear the change in pronunciation here]
leaf - leaves
exceptions: roof roofs / handkerchief handkerchiefs
All irregular plurals:
man men
woman women
child children
ox oxen
louse lice
mouse mice
foot feet
tooth teeth
goose geese
There are certain words that never take plural endings [uncountable nouns: information etc]; nouns which are used in the plural only [scissors] and words which take the same singular and plural [deer].
