How shall I say--"I want to major in Spanish" please?

Simplemente: Quiero especializarme en español.

It could be one of several:
"Quiero hacer una carrera en Español" or "Quiero hacer mi carrera en Español"
(means that you want to make 'a' major in Spanish / 'your' major in Spanish)
"Quiero licenciarme en Español" / "Quiero sacar la licenciatura en Español"
(makes emphasis on getting the title)
"Quiero especializarme en Español"
('I want specialize in', usually narrowing down from a larger branch)
"Quiero estudiar Español"
(simply "I want to study Spanish")
First two make more sense in a university context, depends what you're trying to highlight. Cheers!
